ABOUT US Mark McDonald, Owner & Chef Mark McDonald has worked in the food service industry ever since he was 16 years old in Pittsburgh, PA. Mark’s formal training was at the Culinary Institute of America in Poughkeepsie, NY. Mark did his externship at the Fountainebleau Hotel in Miami Beach, FL. After graduating in 1984 Mark moved to Tampa and worked as a chef at the Guest Quarters Hotel for two years. Subsequently Mark worked at Publix in the Bakery for 7 years. He also worked with several catering companies in Tampa, including Joan’s Catering and Mise en Place. Mark always knew he would start his own business one day. Then, in 2001 Mark leased the location in Northdale and created a menu of his favorite foods from his past experiences. Brianna’s Fine Foods opened in March 2002 and has been going strong ever since with word-of-mouth being the best advertising. Jackie McDonald, Managing Assitant Jackie McDonald, Mark’s wife, has Brianna’s Fine Foods to thank for her first venture into the food service industry. With Mark's excellent direction, Jackie hit the ground running seven years ago. She works side-by-side with Mark to create the many menu items as well as specialty baked goods and party trays and platters. Jackie assists with handling all aspects of the business from customer-relations to taking care of the computer work creating the menus, signs and keeping the website updated. |
